Thanksgiving Day Bacon, Egg and Cheese Frittata

YUM!

Tasty Bistro has come up with a yummy, relatively quick, Thanksgiving enhanced frittata that can easily be turned into a scrumptious bacon, egg and cheese for those in the mood for something more filling.

Ingredients for Frittata:
Makes (1) 6x8 dish


(8) Eggs
(2) Tbl. of Butter
(2) Tsp. of Fresh Sage
2/3 Cup of Chopped Mushroom
1/4 Cup of Chopped Onion
1 Cup of Shredded Cheddar Cheese (or any other cheese desired)
1/2 Cup of Shredded Parmesan
1/2 Cup of Milk (can sub Half and Half or Heavy Whipping Cream)
Salt and Pepper to taste
Green Onion for Garnish

How to make Frittata:

Preheat oven to 350 degrees.

1. Place skillet, (preferably 12" nonstick) on stove and add (1) tbl. of oil or butter. Add the mushroom, onion and sage and saute them for about 4-5 minutes.

(If you do not have an oven safe skillet, you can easily us a regular frying pan and then transfer the eggs into a greased, oven safe dish once it's time for the broiler).

2. In a separate bowl, whisk eggs with the salt, pepper, milk and (1) tbl. of melted butter. Add the cheddar cheese, saving about 1/4 cup for the top of the fritatta once the eggs are out of the skillet.

3. Add egg mixture to skillet.

4. On medium heat, cook eggs for about 2 minutes, scraping the sides and bottom with a heat-resistant spatula. When eggs are mostly cooked but still very wet, stop stirring. You want to see cooked egg scattered throughout, but loose egg in between.
Continue cooking on stove for another minute so underside sets.

5. Sprinkle the rest of the cheddar cheese on top and then layer the parmesan next. Put skillet in the oven and bake for about 10-15 minutes or until all the cheese is melted. Do not overcook or your dish will not be as good. Finish the Frittata by placing it under the broiler. Watch carefully while top browns. This will take 2-4 minutes

6. Remove the skillet from the broiler and garnish the Frittata with green onion.

Cut into squares and serve.

Ingredients for Bacon, Egg and Chesse Frittata Croissant:

(1) Croissant
(1) Square serving of the above prepared Frittata
Shredded Cheddar Cheese (enough for a sandwich)
Mayonnaise
(3) Pieces Bacon
Lettuce
(2) Slices Tomato
Pepper to taste

How to make Bacon, Egg and Cheese Frittata Croissant:

1. Cut croissant in half and melt the cheddar cheese on the bottom layer in a regular, convection, or toaster oven.

2. Once the cheese is melted and the croissant is out of the oven, spread the mayonnaise to the amount preferred and sprinkle with pepper.

3. Cut the frittata into smaller pieces and place it on the melted cheese on the bottom half of the croissant.

4. Add the bacon, lettuce and tomato and call it a day. This fritatta egg sandwich is OFF THE HOOK!
